I can’t even believe it’s taken me this long to feature Lara from Simply Irresistible. Gorgeous and stylish, Lara’s also a fantastic cook! I adore her simplified, no-fuss approach to cooking — her recipes provide so much inspiration, and are extremely accessible, whether you’re new to the kitchen or a seasoned pro! And just this week, Lara opened up an Etsy shop featuring her original artwork. I know big things are in store for her! Take it away, L…
Five places I’d love to visit in my lifetime are the Maldives, the Almafi Coast, the state of California, Africa for a safari, and Hawaii. Itâs so silly that Iâve somehow been to over ten European countries, but never to California! Iâm hoping to cross that one off the list in the near future. Hawaii will be our honeymoon destination, so after May I can take that one off too. Itâs the Maldives and the African Safari that might require a bit more planning (and finances!)
Four books I’d like to read in the next year are – undecided. I promise I will read four books in the next year, but my reading habits come in waves. Right now (sadly) I have nothing on the night stand. I usually read on vacations, at the airport, and by the pool over the summerâ¦and then my reading tapers off. I tend to wait until something catches my eye, or a book receives a ton of buzz, and then pick it up. I also pick over my momâs collection when Iâm home. That woman reads A LOT. With that being said, I have a vacation coming up in a few weeks â any recommendations?
In five years I hope to be a home owner. I had so much fun decorating our one bedroom apartment so I canât even imagine the thrill of decorating a home with multiple bedrooms and bathrooms. I hope to have a job where I can work from home â and have a beautiful home office to accompany that job. In five years (maybe sixâ¦but who knows!) Iâd love to be expanding our little family. Hopefully weâll have a puppy long before this. Iâll need to test my parenting skills on something!
Right now I’m working on:
1. My Etsy shop. Art has been a passion of mine for as long as I can remember. After much debate (and a little encouragement from some fellow bloggers) I decided to take the plunge. Thereâs a good chance that nothing will sell, but at least I can say I tried! It launched yesterday and I’d love if you take a peek.
2. Planning our wedding. Iâm not quite sure how this happened to an anxiety prone perfectionist like me, but wedding planning has been virtually stress free (knock on wood). Still, there are lots of appointments to be scheduled, meetings to be had, and decisions to be made. Iâm doing my best to tackle a little at a time and Iâm confident that our day will be wonderful!
One thing I’ve been dreaming about is a job that involves one of my talents/passions. I spend a lot of time in the kitchen, and lately, a lot of time painting. Iâd love to turn one of my hobbies into a career. Whether itâs blogging about food, opening a cafe or bakery, creating custom pieces of art or stationary⦠Iâd love a job where I can be CREATIVE. every.single.day. Also, please refer to above comments about a home office!
How did your blog get it’s name?
I wanted my blog to be about the fun and happy things in life. Finding a killer new accessory, making a batch of chocolate chip cookies â just because, pouring a glass of wine and lighting a scented candle, the changing seasons⦠Simply Irresistible is about those little things in life that, well, you canât resist.
Who serves as a source of inspiration for you?
I am inspired by so many people. My parents inspire me with their unwavering support. They are the hardest working people I know and remind me that nothing worth having comes easily. My fiancé inspires me to be [more] easy going and to not get hung up on the little things. He inspires me to be honest and genuine, which are by far his best qualities. Iâm inspired by each blogger who has turned their little online journal into something so much bigger. There are so many creative, innovative, stylish bloggers who I feel blessed to âknowâ. Lastly, anyone who has their dream job, their dream family, their dream life. I’m inspired by genuinely happy people!
What is your proudest achievement to date?
This may be a copout answer, so I apologize. I think that my proudest achievement is that Iâve become the type of person who is always trying to achieve more. I try to do things that scare me, attempt to succeed where failure is likely, and I am rarely content with the status quo. Some may call it restless, but I think it resulted in quite a few achievements.
My favorite place to rest and recharge is either my bed (I love a good nap on the weekend) or on the Chicago lakefront for a long run (itâs the best for some alone time and you canât beat endorphins for a good pick me up).
Why did you start blogging and why do you keep doing it?
I started blogging as a creative outlet. Before I started blogging, I read only a handful of blogs and thought it seemed like so much fun. I had no idea how many amazing blogs were out there, or more importantly, how many awesome bloggers there were! Since starting my blog five short months ago, Iâve formed so many friendships. I’ve also had a few wonderful opportunities come from this blog. Thatâs why I keep doing it!
